Chhundo is not just “sweet mango pickle”
The defining physical clue is grated raw mango. That changes the preparation compared with Punjabi mango chunks or Telugu Avakaya pieces: grating creates far more exposed surface area, so sugar dissolves around many fine mango strands instead of only coating larger chunks. Gujarati culinary references consistently identify raw green mango and sugar as the foundation, with chilli and cumin common in modern examples.
The spelling varies in English: chhundo, chundo and chunda all appear. The Gujarati script છૂંદો is included here as a reviewed name layer only. Pohabook is not yet publishing machine-translated Gujarati safety or method prose as authoritative; full translated explanation waits for human/editorial review.
Do not collapse chhundo into Gujarati gol keri, methiyu, Punjabi mustard-oil achar or Telugu Avakaya simply because all may start from green mango. Ingredient form, sugar/oil/acid system and process path differ enough that preservation claims must remain method-specific.

Start with firm, unripe mango because texture must survive grating
Both NDTV and Dassana’s culinary references start with raw/unripe green mango. Choose fruit that is firm and not rotten or heavily damaged. FDA’s safety lane applies before peeling or grating: wash the whole mango thoroughly under running water, do not use soap, detergent or commercial produce wash, cut away damaged or bruised areas, discard rotten fruit, and dry washed produce with a clean cloth or paper towel.
Why dry before grating? FDA’s drying guidance reduces surface bacteria after washing. For chhundo, it also removes obvious rinse water as an uncontrolled culinary variable. Drying is not sterilization and is not a shelf-stability guarantee. It simply gives you a more repeatable starting state before sugar begins drawing liquid from the mango itself.
Grate with clean equipment into a clean vessel. Keep hands, board, grater and spoon clean. Once the fruit is grated, there is much more exposed surface and more opportunity for contamination during repeated mixing, so the handling routine matters.

NDTV publishes a different ratio and spice system, which is useful evidence that chhundo is a culinary family rather than one mandatory formula. That variation is another reason not to infer a universal preservation outcome from “mango + lots of sugar.”
Process choice
Traditional sun maturation and stovetop concentration are different paths
Some Gujarati chhundo traditions dissolve or concentrate the mango-sugar mixture over repeated sun exposure. Sailu’s source documents a sun-dried approach, while NDTV describes traditional sun-drying as a known older method. This is culinary context. Pohabook does not treat a particular number of sun-days as a validated microbial kill step.
Modern quick versions cook the grated mango/sugar mixture until it thickens, then cool it before jarring. NDTV’s current recipe is one such example. Thickening is a texture/concentration endpoint; it is not proof that a home batch has followed a validated canning process.
A sun-matured batch and a stovetop batch may taste similar but have different heat, moisture and handling histories. Do not borrow the storage claim from one recipe and attach it to another process.
Watch the texture, not just the clock
For a stovetop version, steady stirring matters because a high-sugar mixture can stick or scorch. Stop based on the source method and desired spoonable preserve texture rather than assuming “longer is safer.” Over-concentration can make the cooled result much thicker than it looked while hot.
For a sun-based culinary method, protect the batch from obvious contamination according to the source method, use clean/dry handling equipment, and remember that weather, humidity, container geometry and actual process control vary. Pohabook does not publish a generic sun-cured shelf-life promise.

Observe what is changing without turning a texture cue into a safety guarantee
Sailu’s traditional culinary method gives a useful sequence to observe: grated mango first sits with turmeric and salt and releases liquid; the mango is then drained, mixed with sugar, and repeatedly handled with a clean, moisture-free ladle during sun exposure until the sugar has dissolved into a sticky syrup. Those observations help explain what the cook is watching—water release, sugar dissolution and concentration—but Pohabook does not turn the source’s number of sunny days into a validated preservation target.
The same source’s stovetop alternative teaches a different set of visual cues. As sugar dissolves, the mixture becomes looser before it thickens; bubbles appear, stirring continues, and the cook is warned not to overcook because the mixture can become excessively thick or crystallize. The source also notes that the mixture thickens further as it cools. That is a practical reason to stop before the hot mixture looks as thick as the final cooled condiment.
Do not assume you failed. Sugar can draw water from the grated mango and dissolve into liquid before concentration becomes obvious. Follow the chosen culinary method rather than correcting blindly with extra spice or heat.
Lower, steady heat and stirring help control sticking. A darker or thicker syrup is a culinary observation, not evidence that microbes have been controlled or that pantry storage is safe.
Weather and process conditions vary. Do not compensate by declaring the batch safe after a particular day count. Keep the culinary observation separate from the storage decision.

NCHFP’s tested pickling guidance emphasizes that acidity and ingredient proportions can be critical to safety in validated recipes. It specifically warns against changing vinegar, food or water proportions in a tested recipe and uses known-acidity vinegar in tested vinegar-pickle systems. This Gujarati chhundo page is not an NCHFP-tested canning recipe.
That means Pohabook does not make the unsafe leap from “sugar preserves foods” to “this exact jar is shelf-stable for months.” Sugar affects the food environment and is central to chhundo’s identity, but safe shelf-stable preservation depends on the exact validated process and product characteristics—not on sweetness alone.
Wash hands and produce, use clean equipment, remove damaged/rotten areas, dry the mango surface, and start with a clean dry container appropriate to the culinary method.
Use a clean, dry spoon. Avoid returning used serving utensils or wet spoons to the main batch. Limit unnecessary opening and handling.
Use conservative refrigeration rather than inventing a pantry-life number. Label the batch with the preparation date and the process you followed.
Storage evidence
Do not inherit a long shelf-life claim from a culinary blog
Traditional and culinary recipe sources sometimes publish long room-temperature storage claims. Pohabook does not reproduce those claims as safety guidance unless the exact method has defensible modern preservation evidence. A dense sugar syrup, a clean-looking jar, sunlight, spice, or a familiar family practice does not by itself prove that a batch is shelf-stable.
Practical default: if your exact chhundo method is not a validated shelf-stable process, refrigerate the cooled batch in a clean container, keep serving utensils clean and dry, minimize cross-contamination, and inspect the jar before each use. Discard decisions
When safety is uncertain, do not taste the batch to investigate
Discard chhundo if there is visible mold, an off or foul odor, unusual slime, leaking, bulging or abnormal pressure/gas that is not part of the intended method, or another clear sign that the container or product is abnormal. NCHFP says soft/slippery pickles with evident spoilage should not be eaten. USDA FSIS says food from leaking/bulging containers, loose/bulging lids, foul-smelling contents or containers that spurt should not be used and should not be tasted.
If fermentation was not an intended and controlled part of the method, do not rationalize unexplained gas as “maturation.” When in doubt, discard.
You cannot undo contamination by adding more sugar, chilli or sun exposure. Do not claim the batch has been “fixed.” Use conservative judgment and discard when safety is uncertain.
Do not simply scrape visible mold from a questionable home preserve and continue serving it. Discard the suspect batch.
Serving & exploration
Use chhundo as a sweet-tart condiment, then compare the regional logic
Gujarati culinary sources commonly pair chhundo with roti or paratha and Gujarati snacks such as thepla. A small spoonful can add sweet, tart and chilli contrast to a meal. Serve a portion in a separate dish rather than repeatedly dipping used utensils into the storage container.
Chhundo is also useful as a comparison reference because its grated fruit and sugar-forward process are physically different from chunked oil pickles. When you compare it with Telugu Avakaya or Punjabi Aam ka Achar, ask what changed: fruit size, spice system, oil/sugar role, moisture-management method, maturation path and the evidence available for storage. That comparison is more useful than asking which regional pickle is “best.”
