Light encourages greening. Warm storage encourages sprouting and quality loss. Cut geometry
The cut controls the heat path and the surface-to-center balance
Whole potatoes: preserve the largest interior mass. They take longer to heat through because the center is far from the surface. Judge the center, not just the skin.
Large chunks: useful for mash or stews when you want pieces that soften through but are not tiny. Make the pieces similar in size so one piece is not collapsing while another stays firm.
Small cubes: shorten the heat path and give more exposed surface. They can soften rapidly in soups or brown efficiently when given enough pan/tray space.
Wedges: provide broad surfaces for dry heat while keeping a thicker center. Very uneven wedge thickness produces uneven centers even when the outside looks similar.

The pieces are too large for the heat/time combination. Reduce piece size next time or use a method that gives the center more time before aggressive browning.
