Choose firm bulbs with dry outer scales and a sound neck
Utah State University Extension advises choosing onions that feel firm and have dry, papery outer scales. The neck should be small and closed. Softness—especially around the neck—visible decay, serious damage, or active sprouting are signs to choose another bulb when better options are available. This is more useful than selecting by perfect roundness: an irregular but firm, dry onion can be a better kitchen choice than a beautiful bulb that is already softening.
USU also notes that onion types differ in flavor and storage behavior. Yellow, red, white, mild/fresh, and storage onions are useful categories, but those labels should not become absolute cooking laws. A red onion is not “raw only,” and a sweet onion is not automatically the right choice for every browned-onion dish. Decide first whether you need raw crispness, a soft aromatic base, intact roasted pieces, or deeper browning, then use variety as one factor rather than the entire decision.
If you are buying several onions for later use, prioritize dry, intact bulbs. Moisture trapped around damaged scales or a soft neck can shorten useful storage. If you are buying for immediate cooking, the same condition check still matters, but exact size may be chosen for convenience: similarly sized bulbs are easier to portion consistently, while a very large onion can be useful when a recipe needs many slices or a large dice.

Keep dry storage onions cool, dry, and ventilated
USU gives a home-storage planning range of up to about 30 days in a cool, dry place and says whole onions do not need to be washed before storage. Penn State Extension similarly emphasizes proper curing plus cool, dark, well-ventilated storage for longer-keeping onions. Pohabook treats these statements as quality-and-planning guidance, not a universal household countdown. Onion type, curing quality, temperature, humidity, airflow, prior handling, and starting condition all change how long a bulb stays useful.
That means the calendar is not the final judge. Check the onion itself. A bulb that becomes soft, wet, badly moldy, or clearly decayed should not be rescued merely because it is “within 30 days.” Conversely, an intact dry bulb does not become automatically spoiled because a planning estimate has elapsed. Good storage guidance helps you organize a kitchen; it does not replace observation or official safety guidance when food is clearly compromised.
Do not wash whole storage onions before putting them away simply to make them look clean. Added surface moisture works against the dry-storage environment described by extension sources. Instead, keep them dry during storage and wash the produce when you are preparing it for eating or cooking.

Wash before preparation, not with soap
USDA FSIS advises washing fresh fruits and vegetables under cold running tap water before eating or preparing them. Firm produce can be scrubbed with a clean produce brush when needed. USDA also advises against washing fruits and vegetables with detergent, soap, or commercial produce washes because those products are not approved or labeled for use on foods and residues may remain.
For onions, remove loose dirty outer material as part of normal trimming, then wash the produce under running water before cutting. Cut away badly damaged or bruised areas. Peeling changes texture and presentation, but it should not be treated as a substitute for a clean preparation process. Keep the cutting board and knife clean, especially when the same workspace has handled raw meat, poultry, seafood, or other foods that create cross-contact risk.
Cut as close to cooking or serving as practical when fresh flavor and aroma matter. USU notes that onion flavor deteriorates and aroma intensifies after cutting over time. That is a quality reason to prep deliberately, not a claim that a freshly cut onion becomes unsafe at a particular minute.
After the knife
Cut onion belongs in the refrigerator
Once an onion is chopped or sliced, whole-bulb pantry guidance no longer describes its storage state. USDA FSIS says fresh-cut produce should be refrigerated promptly for food safety and quality. USU provides a practical planning range of up to about seven days for chopped or sliced onions stored in sealed containers in the refrigerator.
Use that seven-day figure as a planning boundary from one extension source, not as a guarantee that every cut onion is good until day seven. Starting freshness, refrigerator temperature, handling, cross-contact, container cleanliness, and visible deterioration all matter. If the food is obviously spoiled or was mishandled, a date does not make it acceptable.
A sealed container also helps manage aroma and surface drying. Labeling the container with the preparation date can make household planning easier, but the label should support observation rather than replace it. If you need a shelf-stable onion product, do not treat refrigerated-cut guidance as permission to leave chopped onion at room temperature for long storage.
Choose the form for the job
Match the onion and cut to the result you want
Raw slices, a fine aromatic dice, thick roasted wedges, and deeply browned strands are different jobs. A thin slice spreads raw sharpness through a sandwich or salad. A small dice softens quickly into a sauce or soup base. Larger petals retain structure during roasting. Long slices create a useful shape for gradual softening and browning. The best preparation is therefore not “the correct onion cut” but the cut that gives the desired heat path, surface area, and final texture.
That decision also affects storage. If you only need half an onion, refrigerate the unused cut portion rather than preparing an entire batch unnecessarily. If several meals will use diced onion soon, advance prep may be convenient, but the gain in convenience should be balanced against aroma, texture, and the shorter refrigerated life of cut produce compared with an intact dry bulb.

Preservation boundary
Do not turn a sautéing guide into a canning process
Penn State Extension identifies onions as a low-acid food and directs home preservers toward pressure-canning requirements for plain canned onions. Pohabook therefore does not improvise a shelf-stable onion method from ordinary stovetop cooking, roasting, refrigerator storage, or a user-submitted timer.
If your goal is canning or another shelf-stable preservation method, use a current tested process from an authoritative preservation source and follow the specified preparation, jar size, pressure, altitude, and processing instructions for that process. This guide intentionally stops at the boundary rather than paraphrasing a preservation recipe into a general-purpose rule.
Freezing and drying are separate preservation methods with their own quality and process considerations. A cool pantry, a refrigerator container, a freezer, and a shelf-stable can are four different storage systems; never transfer the assumptions of one system to another just because the ingredient is still “onion.”

Keep the storage state clear
Whole cured onions are meant to stay dry in storage. Save washing for preparation rather than adding moisture before storage.
USDA advises running water, not soap or detergent. Clean the food and the work surface without turning household detergent into a produce treatment.

No. The intact cured bulb belongs in cool, dry, ventilated storage. The cut half belongs refrigerated and protected. Long-term shelf-stable preservation requires a tested process appropriate to low-acid onions rather than either of those household storage rules.
At the store, compare three bulbs. Choose the best one using firmness, outer-scale condition, neck condition, decay, and sprouting—not cosmetic perfection. Then write down where you will store it whole and what changes once you cut it.
