What are you starting with?
Start by identifying the food in front of you, not the category name on a shelf. Illinois Extension distinguishes steel-cut, rolled, and instant oats by processing. Colorado State University Extension treats dry beans, chickpeas, peas, and lentils as pulses but still gives type-specific preparation advice. That is the pattern Pohabook follows: categories help you navigate, while the actual form controls the cooking decision.
Oats, rice, and quinoa usually begin with a package-specific form that changes hydration and texture. The package is evidence about the product in front of you, not mere marketing.
Lentils, chickpeas, and kidney beans may begin dry, but their soaking and safety models differ. Do not generalize one dry-bean procedure across all pulses.
Canned chickpeas or beans have already received commercial heat processing. Your question changes from “How do I hydrate and cook this safely?” to “How do I rinse, season, heat, and store it for the dish?”

“Add water” is not one operation
Hydration can happen before cooking, during cooking, or both. Rolled oats hydrate quickly because they are flattened. Steel-cut oats expose less surface area and usually need a longer cooking window. Utah State University Extension’s quinoa handout explains rinsing to remove the bitter saponin coating before cooking; that rinse is a preparation step, not the same operation as soaking a dry chickpea or rapidly cooling a cooked leftover. Colorado State University Extension notes that soaking can shorten cooking time for many dry pulses, while lentils are a common example that generally do not need pre-soaking.
This is why Pohabook does not publish one “grain and bean water ratio.” A ratio is meaningful only when you know the exact food form, cooking method, batch size, equipment, and endpoint. When a package provides preparation directions for a specific cut or process, use that as a starting model and then observe the food.
4 · Endpoint
Texture belongs to the job you want the food to do
There is no single desirable endpoint across this library. Steel-cut oats may keep chew. Rolled oats can become creamy. Red lentils can break down usefully in soup, while firmer lentils may be chosen when distinct pieces matter. Chickpeas for a salad can remain more structured than chickpeas intended for a smooth puree. Rice can be cooked toward separate grains or a softer dish depending on variety and method.
Instead of asking “Is it done because the timer ended?”, ask whether the food has reached the endpoint required by the dish. Then keep quality decisions separate from safety decisions. A lentil that is too firm can usually continue cooking; cooked rice that sat at room temperature too long is not repaired by boiling it harder later.
5 · Safety boundary
Some members of the library need an extra rule
Kidney beans are the clearest example. FDA guidance on natural toxins says phytohaemagglutinin is found in raw or undercooked beans and is especially associated with kidney beans. FDA currently advises soaking dry kidney beans and then boiling them in fresh water for at least 30 minutes. That is a toxin-control step, not a texture preference, and it is why the Kidney Beans guide has a different model from Lentils or canned Chickpeas.
Cooked rice and other leftovers have a different risk model. FoodSafety.gov identifies rice among foods associated with Bacillus cereus when prepared food sits too long. USDA FSIS says perishable cooked food should be refrigerated within 2 hours under ordinary conditions, or 1 hour above 90°F / 32°C; shallow containers support rapid cooling. FSIS gives a general household leftover context of roughly 3–4 refrigerated days and says leftovers should be reheated to 165°F / 74°C.
6 · Troubleshoot
Six common category mistakes
The processing form changed. Re-open the Oats guide and reset the hydration/time model.
Rinsing and cooked-leftover safety solve different problems. Use the Quinoa guide’s separate cooling/storage section.
Pulse does not mean identical procedure. Lentils generally do not require pre-soaking; choose the guide by type.
Canned chickpeas are already cooked. Your next decisions are texture, seasoning, heating, and leftover handling.
Stop and use the Kidney Beans safety guide. FDA’s high-temperature toxin-control step must come first.
Reheating is not a time machine. If time-temperature history is outside the safety boundary, extra heat later does not make that history disappear.
7 · Practice
Pick the next guide before you cook
You have three tasks: oatmeal for breakfast, a red-lentil soup, and dried red kidney beans for tomorrow. Which guide should you open first for each, and what is the most important difference between the decisions?
Reveal one reasonable answer
Open Oats for breakfast because processing form drives hydration and endpoint. Open Lentils for the soup because lentil type and acid timing affect breakdown. Open Kidney Beans before planning the dry beans because the toxin-control boil is a specific safety requirement, not merely a tenderness technique.
