Same broad family, different edible architecture
Broccoli and cauliflower are both brassica vegetables, but the parts you usually cook are arranged differently. Utah State describes broccoli as a cool-season vegetable grown for its immature flower stalks. Cauliflower is sold as a dense head of curds around a central core. Those structures change surface area, how steam escapes, and how quickly heat reaches a center.
That is why a recipe swap can be reasonable in one dish and disappointing in another. In a blended soup, both may be cooked until soft and then pureed, so the structural difference matters less. On a sheet pan, tiny broccoli tips can darken while thick cauliflower chunks remain firm. Color alone is not a universal freshness test. Cauliflower can legitimately be white, purple, green, or orange. Broccoli varieties also vary. Focus on sound tissue, firmness, and the intended use instead of rejecting normal cultivar differences.

Do not turn storage ranges into one universal expiration clock
Utah State's broccoli garden guidance reports about one to two weeks at 32°F and high relative humidity—controlled conditions that are not identical to every household refrigerator. Its cauliflower consumer guide gives up to about one week in a produce bag in a refrigerator. Those figures describe different crops and assumptions; they are not a reliable reason to declare one vegetable universally “longer lasting.”
The household lesson is simpler: refrigerate promptly, avoid trapping unnecessary surface moisture, and inspect actual condition. If a vegetable is slimy, badly decayed, or strongly off-smelling, do not let a calendar overrule the evidence in front of you. Use each detailed handling guide when storage is the primary question.

Steaming: both can reach crisp-tender or soft endpoints. Match piece size rather than assuming a shared minute count. Roasting: dry surfaces and breathing room encourage browning. Utah State gives one useful cauliflower example: pieces roasted at 450°F for about 10 minutes, flipped, then cooked roughly 5 more minutes until tender-crisp. Substitute by function, then name the trade-off
If a recipe needs a vegetable that can be roasted, steamed, stirred into soup, or served raw, broccoli and cauliflower may both satisfy the broad job. But substitution changes structure, flavor, appearance, and sometimes finishing time. The useful question is not “can I swap it?” but “which property does the recipe depend on?”
If the dish depends on a smooth pale mash, cauliflower is closer to that target. If it depends on a distinct stalk-and-floret bite or green visual contrast, broccoli changes the experience less. The small broccoli florets and thin cauliflower core slices have short heat paths; the thick stem coins and large cauliflower florets have longer ones. Rather than assign one timer, resize or stagger the pieces and watch browning plus center tenderness.
Independent practice: Plan one raw platter, one stir-fry, and one roasted tray using both vegetables. For each, state what property you need, how you would cut each vegetable, the most likely failure, and the cue that tells you the endpoint is reached.

Safe handling is simpler than the cooking comparison
USDA FSIS advises washing fresh produce under cold running tap water before eating or preparing it. Firm surfaces can be scrubbed when appropriate, damaged or bruised areas should be cut away, and consumers should not use soap or detergent on fruits and vegetables.
